Our Food Philosophy

We are passionate about creating dishes that are showcasing locally sourced, seasonal food and produce – ensuring the dishes that you are enjoying whilst dining with us at Lily’s at Highfields are as fresh as possible.

As practicing Climatarians, what is good for the environment heavily influences the decisions we are making - working with seasonal produce that is sustainably grown and native to our region; ensuring we are supporting local food producers and artisans and reducing our carbon footprint through an understanding of the emission levels generated by foods, reducing our food miles and the packaging used.

At Lily’s, whether dining with us in our restaurant, or purchasing from our Artisan range, it’s our belief that pasta should be enjoyed by everyone. We use lentil flour from our friends at Pinnaroo Farms for gluten free pasta; and Bellata Gold semolina flour for all of our other pastas.

We proudly support our local farmers producing sustainably grown fruit in vegetables that are in season, with stock delivered first thing each morning. Thank you to Pete and Alice from Red Ridge Farmstead for their ongoing support in producing the best chemical-free vegetables for us to cook with. We are great believers that natural flavours, when cooked correctly, taste the best and for that reason, we use no preservatives in any of our dishes or the Lily’s Artisan range.

Our meat comes to us from trusted suppliers including GreenAg Organic Free Range Turkey & Chicken, Emperors Pork and Lamb and Bannock Brae Meats.

We’re playing our part to live more sustainably and help make our community a better place; and, if you’re wondering why each dish on Lily’s at Highfields menu has the KM’s next to it – we’re sharing how far each plate of food (the main part of the dish) has travelled to get to the table for you to enjoy whilst dining with us.
